In Monticchio, in the green heart of Basilicata, the Vulcano Restaurant is a sensory experience born from the encounter between fire cuisine and the purity of Lucanian nature.
Our culinary offering changes with the seasons, because we believe in the freshness, authenticity, and biodiversity of this land. The menu is conceived as a story of the territory, highlighting local products with carefully crafted preparations, charcoal grilling, and aging processes that respect the timing of the raw ingredients.
Identity cuisine, grill, and excellent raw materials
Among the appetizers, the beef tartare with mango and passion fruit, or the cardoncello mushroom cooked in oil on Parmigiano fondue and crispy pepper, are just some of the contemporary interpretations of local flavors.
The first courses – such as our ricotta raviolone with Aglianico reduction and crispy pepper or the orecchietta with Lucanian trio with lamb ragout, sausage, and braciola – speak the language of tradition with bold and sincere accents.
But it is with meats that the Vulcano restaurant best expresses its soul: selected cuts from all over the world, expert aging, and a lively grill that cooks and smokes with elegance. From Lucanian Podolica to Danish beef, from Argentine Cuberoll to the surprising kangaroo, each offering is a tribute to quality and passion.
Tasting journeys and wine pairing
We offer two tasting menus – with 4 or 5 courses – that allow you to explore the essence of our cuisine, with iconic dishes, selected meats, and a careful selection of Lucanian wines, such as Aglianico del Vulture. It is possible to pair the tasting journeys with a dedicated wine pairing, to experience a complete food and wine experience.
